Sweet Potato Pancakes

This pregnancy I am seriously craving comfort food.  It’s still 85 degrees in NYC and I have been cooking a lot of soup, Buddha bowls, and grilled cheese.  However, I am kind of grateful for these cravings.  Last time around I had my placenta encapsulated and my doula mentioned that a portion of it had calcified.  I had been pregnant all summer, eating a lot of cooling foods, which is necessarily great for a totally healthy placenta according to my doula.  Who knew?!  Not me!  So taking that knowledge and using it.

Okay onto the pancakes!  So when looking for a recipe I usually google what I am looking for and pick the recipe that I have most of the ingredients for.  Sometimes it turns out perfectly...like these.  Easy, delicious, and I substituted a couple of things.  I adapted this recipe from www.truewellth.com.

Easy Sweet Potato Pancakes (vegan, gluten free)

2 c oat flour

2 tbsp baking powder

1 tsp cinnamon

1/2 tsp ground ginger

1/4 tsp nutmeg

1/2 tsp salt

1 c water (or nut milk of choice) 

1/2 c applesauce  

1 c puréed sweet potato

2 flax eggs

2 tbsp maple syrup

1 tsp vanilla extract

whisk together dry ingredients. In a seperate bowl stir together wet ingredients.  Pour wet into dry and mix well.  Heat coconut oil in a pan sand cook pancakes until crispy and brown.  Enjoy!
